Pet Nat is the abbreviation for “pétillant naturel”, or natural sparkling. It is a natural sparkling wine. The grapes are grown in keeping with organic or biodynamic farming. No additives are added, nor any sulphites: just like natural wine. It is often said that Pet’ Nat’ is made using the ancestral method. So let us set off to discover Pet Nat.
How do you make a Pet Nat?
To make Pet Nat, you use an ancestral method. It is different from the Champagne method used by all the champagne houses. In the winemaking process, the yeasts consume the sugar and produce alcohol. This process is called “alcoholic fermentation”. However, for the production of natural sparkling wine, you stop this process halfway before bottling. This fermentation is stopped by cold. Once the temperature rises again, the yeasts in the bottle finish consuming the sugars, thus releasing the carbon dioxide that is behind the bubbles of this natural sparkling wine. It is by being made using this method that Pet’ Nat’ stands out from the crowd.
